Fast veggie stir-fry with no sauce and lots of flavor:
Spray a pan with cooking spray and add in carrots, onions and 2 whole Star Anise. Sauté for a few moments, then add snow peas, green pepper, mushrooms, broccoli, celery and garlic, I like 2 large cloves finely chopped. I also like to top it off with a few red pepper flakes. It makes a very nice stir fry to top brown rice with.
Roasting Garlic:
Take a garlic bulb and cut off the top of it exposing all of the cloves. Place on a piece of tin foil and spray with cooking spray (the olive oil kind). Wrap in foil and place in the oven at 400 for 40 minutes. Remove and let cool. Take cloves and squeeze them into a little bowl. Mix the garlic mush around. By roasting garlic it gives it a mellow roasty flavor. This spread is amazing on bread, noodles, rice, veggies, eggs ect. Since we can’t have salt or oil this goes on most everything for me.
Guacamole:
What a life saver this has been for me. Packed full of flavor it helps me get through my veggie regimen. I like to eat it plain but it is also great as a spread for sandwiches or topped on salad, noodles, rice or as a tortilla in the morning with my egg. 1 ripe avocado, roasted garlic spread (see above), minced dried onion, dried oregano, and then I put in enough tomatoes till I hit my grams. I typically make enough for two meals. I don’t make much more as it turns brown. It is so easy to make I make it in the mornings before I am going to eat it.
Corn on the Cob:
I love to get these and peel back the husk but leave it attached at the bottom. Then I take my favorite seasonings and I rub it on the corn. Then I bundle the corn back up and tie a butcher twine around the husk to keep it nice and sealed. To cook I throw it on the bbq grill. Typically once the rest of the food it done (of course I keep rotating the corn while cooking) my corn on the cob is ready to eat. Some combination's I like are thyme and rosemary, chili powder for spicy corn, or rub on some roasted garlic!

ReplyDeleteThe roast garlic sounds delicious... too bad I don't have an oven at home (tiny Hong Kong apartment...) but maybe I'll try to get Robbi to make it haha
I actually use my toaster oven for this task. Not sure if you have access to that. I think I would die if I didn't have an oven!! I have two and I am thinking about making that three so when I cook large meals I can bake, roast and warm all at the same time.
